Yes, I'm talking about making nachos with Doritos. Mind-blowing? Maybe. But why not pack even more cheesy goodness into an already flavor-packed bite?

Doritos cheese nachos make the perfect snack but they are also hearty enough to eat as a meal. Try swapping out the beef for chicken. Or omit the meat and add beans for a vegetarian version. Customize the toppings to create your ideal pan of nacho flavors.

Doritos - These nachos start with cheesy Doritos instead of traditional tortilla chips.

Cheese - Use a good melting cheese, such as cheddar, Monterey Jack, Pepper Jack, or Colby - or a combination.

Ground beef - Ground chicken, turkey, or Chorizo can also be used. For a vegetarian option, skip the meat and use black beans or pinto beans.

Seasonings - I like to season the beef with a simple blend of onion and garlic powder, salt and pepper. Chili powder and cumin or packaged taco seasoning can also be used if you prefer more robust flavor.

  1. Preheat the oven to 350 degrees.
  2. Add the ground beef to a skillet set over medium heat. Add the seasonings. Cook the ground beef until no longer pink, crumbling the meat as it cooks. Drain the excess fat.

  1. On a sheet pan, layer half of the Doritos, half of the cheese, and half of the beef.
  2. Make a second layer using the remaining Doritos, cheese, and beef.

  1. Bake for 10-12 minutes until the cheese is melted. After 10 minutes, watch carefully to make sure the Doritos don't start to burn.

  2. Shred your own cheese. Freshly shredded cheese melts so much better than pre-shredded cheese which has additives to prevent clumping.
  3. Build the nachos in layers so that all of the chips are equally coated with cheese and other toppings.
  4. Build the nachos on a sheet pan for ease of heating and clean-up. Use a half-sheet pan for larger gatherings or a quarter sheet pan for small batches.

Ingredients

  • ½ pound ground beef
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 14 ounces nacho cheese Doritos (or any Doritos variety )
  • 8 ounces sharp cheddar cheese (shredded)
  • 8 ounces Monterey Jack cheese (shredded)

Toppings

  • black olives, tomatoes, scallions, sour cream, and guacamole (or toppings of your choice)

Instructions

  • Preheat oven to 350 degrees.

  • Add the ground beef to a skillet set over medium heat. Season with onion powder, garlic powder, salt, and pepper. Cook until no longer pink, crumbling the meat as it cooks. Transfer the meat to a paper towel-lined plate. Set aside.

  • While the meat cooks, shred the cheese.

  • On a sheet pan, layer half of the Doritos, half of the cheese, and half of the beef. Repeat with a second layer.

    Been making these for awhile. I think I grew up on these exact nachos but decided to google to see if any other ideas for topping are out there and your recipe seems to be the way our family makes these. We sometimes go all out and add everything from canned chili to refried beans and taco seasoning packets to ground beef to plenty of cheeses to black olives and after of course sliced green onions and cilantro guacamole, dab of sour cream or salsa can be added as well.

    We love these.
