I had chocolate chip muffins once in phu*ket and then now recently in Bali when we ordered for the continental breakfast.

Otherwise not a big fan of it to buy it and eat in usual days. But after making choco chip cookies, I had some chocolate chips remaining.

So wanted to make muffins out of it. And still I do have, will make hot chocolate and enjoy as well as empty the choco chips😊.

Aj being allergic to cocoa, these muffins are only for me, me only 😚. The recipe is adapted from Divya's vanilla sponge cake.

Ingredients

  • Chocolate chips - I used Hershey's mini semi sweet chocolate chips.
  • All purpose flour - Plain flour or Maida as we know in India. You can also use wheat flour in place of it, but the texture turns dense.
  • Baking powder & Baking soda - Make sure these are fresh in stock. Otherwise it may give weird smell.
  • Yogurt - Plain yogurt store bought or homemade curd works too. This is main for the baking powder and baking soda to react with in any eggless baking.
  • Corn flour - In India, we call this as corn flour. In some parts of world it is called corn starch. It is white in colour, NOT yellow.
  • Oil - Use neutral flavor oil like sunflower or vegetable. You can use melt butter in place of oil, but the texture can turn brittle or dry. Suggest to mix 50-50 in that case.

My notes

  • Please read the above before baking. There is no skipping any of the ingredient as this is eggless version and all the ingredients are required for spongy and soft texture.
  • Usually the baking temperature and preheat temperature is same. Some ovens give you indication when the set temperature is reached. Few models, don't. So, take preheat time as 15 minutes.

Storage & Shelf life

Eggless muffins stays good at room temperature itself (Keep covered, not airtight, just cover it with a lid over stand). Just make sure it is completely cooled down over wire rack before covering.

You can refrigerate and store upto 10 days. Cling wrap individually and you can microwave for few seconds to warm it before serving.

Ingredients

  1. Preheat oven at 180 deg. C. Sieve all purpose flour and corn flour twice to ensure even mixing.
  2. In a mixing bowl, mix well the curd and sugar to dissolve it.
  3. Add baking powder and baking soda (sodium bicarbonate) and mix well and set aside for 2 minutes.
  4. The mix will become slightly frothy with small bubbles. Now mix in vanilla and oil.

  5. Then add 1 tablespoon of the flour at a time until you finish all the flour to get the batter.

  6. Mix chocolate chip with 2 teaspoon of flour to coat it and add it to the batter, give a gentle mix with a spatula.
  7. Line a muffin tray with muffin liners and spoon the batter ¾th in each muffin liner. Top with few more chocolate chips if you like.

  8. Bake for 18-20 minutes or until the toothpick inserted comes out clean. Carefully take out from the muffin tray and cool down over a wire rack.

Ingredients

  • 1.5 cup All purpose flour Refer steps & notes - Important
  • 3 tablespoon Corn flour
  • ½ cup Chocolate chips
  • ¾ cup Sugar
  • ½ cup Oil
  • 1 cup Yogurt curd
  • 1 teaspoon Baking powder
  • ½ teaspoon Sodium bicarbonate
  • 1 teaspoon Vanilla essence

Instructions

  • Preheat oven at 180 C deg firstly. (15 mins)

  • Secondly, measure all purpose flour and take out 3 tablespoon from it. Then add 3 tablespoon corn flour to it. Basically we are taking out 3 tablespoon all purpose flour and replacing it with corn flour.

  • Sieve all purpose flour and corn flour twice to ensure even mixing.

  • In a mixing bowl, mix well yogurt (curd) and sugar to dissolve it.

  • Add baking powder and baking soda (sodium bicarbonate) and mix well. Set aside for 2 minutes.

  • The mix will become slightly frothy with small bubbles. Now mix in vanilla and oil.

  • Then add 1 tablespoon of the flour at a time until you finish all the flour to get the batter.

  • Mix chocolate chip with 2 teaspoon of flour to coat it and add it to the batter, give a gentle mix with a spatula. (You can use the same flour from your mixing bowl)

  • Line a muffin tray with muffin liners and spoon the batter ¾th in each muffin liner.

  • Top with few more chocolate chips if you like.

  • Bake for 18-20 minutes or until the toothpick inserted comes out clean.

  • Carefully take out from the muffin tray and cool down over a wire rack.

Notes

  • I used my hand whisk for mixing the batter.
  • Use only the spatula to just mix the choco chip gently in the batter. Do not over mix.
  • I used semi sweet choco chips, the muffins were a bit on sweeter side for me. You can add a pinch of salt to avoid flat taste.

    hi...ur receipe is very interesting and easy for beginners ....i recently learnt to bake so i wd luv to try this muffins...i require some help...
    1...u used hand whisker is it fine with hand whisking or shd we try out hand mixer..

    2...i ve silicon heart shaped 6 moulds can i pour directly as i dont ve heart liners....or do i ry out in aluminium cups with liners

    3...silicon mould also has the same baing temp

    4...silly doubt...what is frosting in cakes as well as fondant

    You can use hand mixer, but do not over mix.
    You can directly pour in a silicon mould, no need to line it.
    same temperature as well.
    frosting is something creamy and fondant is something that will be smooth, stiffer and soft finish.I too am a beginner, so have less exposure to the baking terms 🙂

    Hi, I am a regular follower of your posts. I have some clarification. Can you please tell me which kind of oven you have? Convection/grilled/just microwave mode alone? I see ur trays are non stick with metal coated. Can I use these in microwave mode? or if I should use in convection mode whats the temperature needed for baking as mentioned in your posts? Please kindly reply.
    FYI... I have Samsung 32 L Convection mode oven

    I too have a combination oven, that has microwave mode, convection mode, grill mode and a combination mode. I never change that tray. So if yours also is a combination oven which has convection mode, follow the same temperature and method.

    Measure first 1 & 1/2 cups of flour, take out 3 tblsp of flour from it and add 3 tblsp corn flour to it. The idea is to replace with corn flour.

    Hi I tried out these nd it came out so well n taste superb. But would like to share something escp for beginner here it was mentioned 18 to 20 mins at 180'c. I have ifb 20l 800w microwave mine came out in just 10mins nd the second batch in 5 mins. So pls keep watching as it bakes so that it doesn't get burnt. The size nd watt does matter according to me.

    Hi... can curd be replaced with anything else like milk or butter..? As my daughter just hates the smell of curds she would not touch these if curd was added...     Yes, it happens. You can dust with icing sugar if you want to cover it up. Next time, you can avoid closing tightly and let them breath a little. And even if it is sticky initially, it will again absorb the moisture and become soft.

    Melt same amount of butter (1/2 cup) just to liquify butter and in the recipe. Texture can be more crumbly if you use butter. You can also try 50 50 butter plus oil.
