This Black Bean Taco Casserole recipe is a tasty, easy to prepare dinner perfect for busy weeknights. A one pan kid friendly meal which requires only a handful of ingredients. Vegetarian, Gluten Free, Easy.
Okay Guys.... not that I really need to ask... But who doesn't love an easy tasty dinner or casserole?
Easy taco casserole
Is one that tastes like tacos onlylayered in one pan with lots of cheesy goodness.
And since I'm pretty sure most of you would Agree 😉.....
You simply can't go WRONG with anything involving tacos, lots of cheese and EASY dinners....
So let's move on... Shall we 🤗
Ingredients for this taco casserole recipe
- Gluten Free Tortillas
- Black Beans
- Corn
- Cooked Quinoa or Rice
- Tomatoes
- Onion & Garlic
- Cheese
- Greek yogurt or Sour cream
- Spices
Additional toppings
- Jalapeno
- Chopped tomatoes
- Cilantro
- Sour cream
- Avocado
- Salsa
So as you can see this is very versatile and can be customized with YOUR family's favorite toppings....
Or it's even great as is... without any additional toppings.
Can this be made ahead
Yes. This is a great make ahead meal and re-heats easily.
Or you can even make the filling ahead and then just layer & bake right before dinner.
And it's also perfect as leftovers... if you're lucky enough to have any.
Easy swaps or substitutions
When I originally made this recipe it was with Brown rice but after trying with Quinoa, that's what I prefer...
So you can use any kind of rice or quinoa.
You can easily swap Sour Cream for the Greek Yogurt if you prefer... not a lot of differences in the texture or flavor.

Taco Casserole Recipe (Gluten Free, Vegetarian)
Black Bean Taco Casserole is an easy to prepare weeknight dinner requiring only a few ingredients.

Ingredients
- 1 tbsp. olive oil
- 1 medium yellow onion chopped
- 2 cloves garlic finely chopped
- 1 box/can black beans drained and rinsed 11-14 ounces
- 1 cup frozen corn kernels rinsed
- 1 jalapeno seeded and chopped optional
- 1 large tomato chopped
- 1 tsp. chili powder
- ½ tsp. cumin
- ½ tsp. garlic powder
- ½ tsp. oregano
- 1 cup cooked brown rice or quinoa*
- 1 cup plain greek yogurt or sour cream I use full fat
- 7 Gluten free tortilla wraps
- 2 cups shredded cheddar cheese
Instructions
Preheat oven to 350 degrees.
Meanwhile heat olive oil in pan over medium heat. Add onion and garlic and saute 2-3 minutes until fragrant.
Add black beans, corn, jalapeno, tomato, spices, brown rice, and yogurt and combine well.
Cook another 6-8 minutes and set aside.
In 9 by 9 casserole pan you will start by layer ⅓ of bean mixture, cheese, then tortilla.
Repeat layering ending with tortilla and cheese on top layer.
Bake covered in preheated oven 30 minutes.
Allow to cool ten minutes prior to serving.

*you can prepare your rice or quinoa ahead saving time when making this.

Great casserole! I added a cup of chopped zucchini with the onion & garlic. I used corn tortillas. Needed some salt. Served with a folio of sour cream & sliced avocado.

As usual I'm horrible at following directions - ADHD perhaps, or just me. =) Made these tonight w/ many variations however it was one of the most flavorful dishes I've made in a long, long time. Instead of rice I used GF pasta that I cooked super al dente and instead of yogurt I used a cashew-based jalapeno queso I purchased recently and had no idea what to use it for! The seasoning was perfect w/ just the right amount of kick! Used corn tortilla b/c they were handy. All in all, a super fab recipe and is now on the "keeper" section of our growing list. Thank you so much for the inspiration to a dull, tough time!

Do you think I could use naturally gf corn tortillas? I'm trying to avoid the imitation gf products, they always make me feel worse after eating them (and I've read they aren't so good for you).
I know the corn tortillas are smaller, so I would use more of them. The only issue I could see is they are a bit thicker, and not as soft. Do you think this would be a problem?Reply

Hi Malka, I'm sure that would be fine to use the corn tortillas. And I understand only wanting to use natural products and that's exactly WHY I make my own tortillas now... Never could find any I liked.😏 If you have time you may want to try making your own. I have a link for that recipe in the blog post. And I don't think them being thicker will create a problem. I just prefer my homemade ones for flavor.

Hi I’m wondering how spicy this is with the chilli powder as my kids can’t handle any heat?!also can u substitute basmati rice for brown if that’s what u have on hand. Thanks looking forward to trying this

Hi Carissa, this is really not spicy with the chili powder but you probably would not want to add the jalapeno if they don't like spicy. And yes it would be fine to substitute basmati rice for brown. Let me know how it goes. Enjoy 😀
